My Father and I started brewing beer on our kitchen stove in early 2009, when I had only just decided I liked the stuff. As I began to acquire a taste for the thousands of different flavors and types of beer, I also developed a passion for recreating them and eventually, making our own recipes. We made every kind of ale and porter we could think of, including infusing various herbs and spices. The response from our friends and family, and the amount of sheer fun we had brewing together, made the decision to purchase an all-grain brewing system earlier this year a no-brainer. Our new 26 gallon beer producing setup was made by Synergy brewing systems here in Eugene, Oregon. It has allowed us to develop our passion even further, and with the larger capacity, we were producing enough beer a month to put together a tasting of the brews we're most proud of.
It seemed our little hobby was becoming something larger; we were now supplying the drinks for every holiday dinner, party and special event our family or friends gathered for. We even had the honor of gifting a keg of amber ale to our good friends for their wedding reception. We had been calling ourselves the Cosmic Tortoise Brewing Company for several weeks when my older brother, Erik Legault, designed a sketch for a logo that we quickly adopted as the official symbol for our rising nano-brewery. In just a few short years beer has become something of a way of life for my father and I just like it has for so many others in the craft brewing world.
